Chinese Bhel



Chinese Bhel is a popular Indian street food that combines crispy noodles with a flavorful mixture of vegetables and sauces. A step-by-step recipe for making Chinese Bhel:

Ingredients:
- 2 cups of crispy fried noodles (store-bought or homemade)
- 1/2 cup of finely chopped cabbage
- 1/2 cup of finely chopped capsicum (bell pepper)
- 1/4 cup of finely chopped carrots
- 1/4 cup of finely chopped spring onions (both green and white parts)
- 1/4 cup of finely chopped onion
- 2-3 finely chopped green chilies (adjust to taste)
- 2 tablespoons of soy sauce
- 1 tablespoon of chili sauce (adjust to spice preference)
- 1 tablespoon of tomato ketchup
- 1 tablespoon of vinegar
- 1 teaspoon of finely chopped garlic
- 1 teaspoon of finely chopped ginger
- 1/2 teaspoon of black pepper powder
- Salt to taste
- 2 tablespoons of oil
- Chopped fresh coriander leaves for garnishing
- Roasted sesame seeds for garnishing (optional)

Instructions:

1. Prep Ingredients:
   - Chop all the vegetables finely and keep them ready.
   - If using store-bought noodles, break them into small pieces. If using homemade noodles, ensure they are crispy and ready to use.

2. Prepare the Sauce Mixture:
   - In a small bowl, mix soy sauce, chili sauce, tomato ketchup, and vinegar. Set aside.

3. Heat Oil:
   - Heat 2 tablespoons of oil in a wok or pan over medium-high heat.

4. Sauté Aromatics:
   - Add finely chopped garlic and ginger to the hot oil. Sauté for a few seconds until fragrant.

5. Add Vegetables:
   - Add chopped onions, green chilies, and white parts of spring onions. Sauté for 1-2 minutes until the onions turn translucent.

6. Add Vegetables (Continued):
   - Add chopped cabbage, capsicum, and carrots. Stir-fry for another 2-3 minutes until the vegetables are slightly tender yet crisp.

7. Seasoning:
   - Add black pepper powder and a pinch of salt. Remember, sauces also contain salt, so add salt carefully.

8. Add Noodles:
   - Add the crispy fried noodles to the pan. Toss everything together to combine.

9. Sauce Mix:
   - Pour the prepared sauce mixture over the noodles and vegetables. Toss well to coat the noodles and veggies evenly with the sauce.

10. Garnish:
    - Add the green parts of spring onions and chopped coriander leaves. Toss again to mix.

11. Serve:
    - Transfer the Chinese Bhel to serving plates.
    - Garnish with roasted sesame seeds (if using).
    - Serve immediately as a delicious and crispy street food snack!
