Ingredients you'll need:

- Chicken wings, mid-joint or drumettes

- Ginger-garlic paste

- Soy sauce

- Red chili powder

- Vinegar or lemon juice

- Cornstarch

- All-purpose flour

- Egg

- Salt, to taste

- Oil, for frying

- Spring onions (for garnish)

- Sesame seeds (for garnish, optional)


Step 1: Prepare the Chicken Wings

1. Take the chicken wings and carefully separate the meat from the bone at the thinner end of the wing. Push the meat towards the thicker end to create a "lollipop" shape. You can remove some of the skin from the meatier part to expose the bone.


Step 2: Marinate the Chicken

1. In a bowl, mix ginger-garlic paste, soy sauce, red chili powder, vinegar or lemon juice, and salt to create the marinade.

2. Coat the chicken lollipops with the marinade. Make sure they are well coated. Allow them to marinate for at least 30 minutes, or preferably a few hours, in the refrigerator.


Step 3: Prepare the Batter

1. In a separate bowl, mix cornstarch and all-purpose flour. This will be the dry mixture for the batter.

2. Beat an egg in a separate bowl. This will be the wet mixture for the batter.


Step 4: Coat the Chicken

1. Heat oil for deep frying in a pan over medium heat.

2. Dip each marinated chicken lollipop into the dry flour mixture, ensuring it's coated evenly.

3. Then dip it into the beaten egg to coat it with a thin layer of egg.

4. Dip it back into the dry flour mixture for a second coat. This double coating gives a crispy texture.


Step 5: Fry the Chicken Lollipops

1. Once the oil is hot, carefully place the coated chicken lollipops into the oil. Fry them in batches to avoid crowding the pan.

2. Fry the lollipops until they are golden brown and cooked through. This may take about 8-10 minutes, depending on the size of the lollipops.


Step 6: Drain and Garnish

1. Use a slotted spoon to remove the fried lollipops from the oil and place them on a plate lined with paper towels to drain excess oil.

2. Garnish the chicken lollipops with chopped spring onions and sesame seeds (optional) for added flavor and presentation.


Step 7: Serve and Enjoy

1. Your Chicken Lollipops are ready to be served! They can be enjoyed on their own or with a dipping sauce of your choice.
