Chole Bhature Recipe


Ingredients you'll need:


For the Chole (Chickpea Curry):

- 1 cup dried chickpeas (or 2 cans of cooked chickpeas)

- 2 medium onions, finely chopped

- 2 medium tomatoes, finely chopped

- 1 tablespoon ginger-garlic paste

- 2-3 green chilies, chopped (adjust to taste)

- 1 teaspoon cumin seeds

- 1 teaspoon coriander powder

- 1/2 teaspoon turmeric powder

- 1 teaspoon garam masala

- 1 teaspoon cumin powder

- 1 teaspoon red chili powder (adjust to taste)

- 1 teaspoon amchur (dried mango powder) or lemon juice

- Salt, to taste

- Fresh coriander leaves, chopped (for garnish)

- Cooking oil


For the Bhature (Deep-Fried Bread):

- 2 cups all-purpose flour

- 1/2 cup plain yogurt

- 1 teaspoon sugar

- 1/2 teaspoon baking powder

- 1/2 teaspoon baking soda

- Salt, to taste

- Water (as needed)

- Cooking oil (for frying)


Step 1: Prepare the Chole (Chickpea Curry)

1. If using dried chickpeas, soak them in water overnight. Drain and rinse.

2. Pressure cook the soaked chickpeas with water until they are soft and cooked. If using canned chickpeas, rinse them well.

3. In a pan, heat oil and add cumin seeds. Once they splutter, add chopped onions and sauté until golden brown.

4. Add ginger-garlic paste and chopped green chilies. Sauté until the raw smell disappears.

5. Add chopped tomatoes and cook until they turn soft and oil starts to separate.

6. Add coriander powder, turmeric powder, cumin powder, red chili powder, and salt. Mix well.

7. Add cooked chickpeas and a little water. Let the curry simmer for about 15-20 minutes, allowing the flavors to meld.

8. Add garam masala, amchur (or lemon juice), and chopped coriander leaves. Mix well. The chole curry is ready.


Step 2: Prepare the Bhature (Deep-Fried Bread)

1. In a mixing bowl, combine all-purpose flour, sugar, baking powder, baking soda, and salt.

2. Add plain yogurt and mix. Gradually add water and knead to form a soft dough. The dough should be slightly sticky.

3. Coat the dough with a little oil, cover it, and let it rest for about 2 hours.

4. Divide the dough into small portions and roll them into balls.

5. Roll out each ball into a circular disc, similar to a puri but slightly thicker.


Step 3: Fry the Bhature

1. Heat cooking oil in a deep pan for frying. The oil should be moderately hot, around 350°F (175°C).

2. Carefully slide a rolled-out bhatura into the hot oil. It should puff up and start to float.

3. Gently press the bhatura with a slotted spoon to help it puff up evenly. Fry until it's golden brown on both sides.

4. Remove the fried bhatura from the oil and let the excess oil drain on a paper towel.


Step 4: Serve Chole Bhature

1. Serve the hot and puffed bhature with the delicious chole (chickpea curry).

2. Garnish the chole with fresh chopped coriander leaves.

3. You can also serve sliced onions, green chilies, and lemon wedges as accompaniments.
