Masala Dosa

Ingredients you'll need:


For the Dosa Batter:

- 2 cups raw rice

- 1/2 cup urad dal (black gram lentils)

- 1/2 teaspoon fenugreek seeds

- Salt, to taste

- Water, as needed


For the Potato Filling:

- 3-4 large potatoes, boiled, peeled, and mashed

- 1 onion, finely chopped

- 2-3 green chilies, chopped

- 1 teaspoon mustard seeds

- 1 teaspoon cumin seeds

- A pinch of asafoetida (hing)

- A few curry leaves

- 1/2 teaspoon turmeric powder

- Salt, to taste

- Oil, for cooking

- Fresh coriander leaves, chopped (for garnish)


Step 1: Prepare the Dosa Batter

1. Wash the rice and urad dal separately and soak them along with fenugreek seeds in water for at least 4-6 hours.

2. Drain the soaked rice and dal. Grind them to a smooth batter using water as needed. The batter should be thick but pourable.

3. Add salt to the batter and mix well. Allow the batter to ferment for 8-12 hours or until it's doubled in volume and has a slightly sour aroma.


Step 2: Prepare the Potato Filling

1. Heat oil in a pan and add mustard seeds. Allow them to splutter.

2. Add cumin seeds, asafoetida, and curry leaves. Sauté for a moment.

3. Add chopped onions and green chilies. Sauté until the onions turn translucent.

4. Add turmeric powder and sauté for a minute.

5. Add the boiled and mashed potatoes. Mix well and cook for a few minutes. Add salt to taste. The potato filling is ready.


Step 3: Make the Dosas

1. Heat a non-stick or cast-iron griddle (tawa) over medium-high heat.

2. Once the tawa is hot, pour a ladleful of dosa batter onto the center of the tawa.

3. Using the back of the ladle, spread the batter in a circular motion to form a thin, even layer.

4. Drizzle a little oil around the edges of the dosa.


Step 4: Add the Potato Filling

1. Once the dosa edges start to lift and become crisp, spoon a portion of the prepared potato filling onto the center of the dosa.


Step 5: Roll the Dosa

1. Carefully fold the sides of the dosa over the potato filling to form a roll or a half-moon shape.


Step 6: Serve and Garnish

1. Remove the masala dosa from the tawa and place it on a serving plate.

2. Garnish with chopped fresh coriander leaves.

1. Serve the masala dosa hot with coconut chutney and sambar for a delicious South Indian breakfast or brunch.
