Mutton Curry Recipe
Ingredients you'll need:
- 1 kg mutton pieces, washed and cleaned
- 2 large onions, finely chopped
- 2 medium tomatoes, chopped
- 2 tablespoons ginger-garlic paste
- 1/2 cup plain yogurt
- 2-3 green chilies, slit (adjust to taste)
- 1 teaspoon cumin seeds
- 2-3 bay leaves
- 4-5 cloves
- 4-5 green cardamom pods
- 1 cinnamon stick
- 1 teaspoon turmeric powder
- 2 teaspoons red chili powder (adjust to taste)
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1 teaspoon garam masala
- Salt, to taste
- Fresh coriander leaves, chopped (for garnish)
- Cooking oil or ghee
Step 1: Marinate the Mutton
1. In a bowl, mix the mutton pieces with yogurt, ginger-garlic paste, half of the chopped onions, turmeric powder, red chili powder, cumin powder, coriander powder, and salt.
2. Let the mutton marinate for at least 30 minutes to 1 hour. Longer marination can enhance the flavors.
Step 2: Sauté the Aromatics
1. Heat oil or ghee in a heavy-bottomed pot or pressure cooker.
2. Add cumin seeds, bay leaves, cloves, green cardamom pods, and cinnamon stick. Sauté for a minute until fragrant.
Step 3: Add Onions
1. Add the remaining finely chopped onions to the pot.
2. Sauté the onions until they turn golden brown.
Step 4: Add Tomatoes and Spices
1. Add the chopped tomatoes and cook until they soften and the oil starts to separate.
2. Add ginger-garlic paste and sauté for a few minutes until the raw smell disappears.
Step 5: Cook the Mutton
1. Add the marinated mutton along with its marinade to the pot.
2. Mix well and cook the mutton on medium heat for about 10-15 minutes, stirring occasionally, until the meat is browned and the masala coats the mutton.
Step 6: Pressure Cook the Mutton (Optional)
1. If using a pressure cooker, add enough water to cover the mutton.
2. Close the pressure cooker lid and cook the mutton for about 5-6 whistles or until the meat is tender.
Step 7: Finish the Curry
1. Open the pressure cooker lid after the pressure releases naturally.
2. Add slit green chilies, garam masala, and fresh coriander leaves. Mix well.
3. Simmer the curry for a few minutes to allow the flavors to meld and the gravy to thicken.
Step 8: Serve
1. Your mutton curry is ready to be served. It goes well with steamed rice, naan, roti, or any Indian bread.
