Ingredients you'll need:


- 2 cups cooked rice (preferably cold, leftover rice)

- 1/2 cup mixed vegetables (carrots, bell peppers, peas, etc.), finely chopped

- 1 small onion, finely chopped

- 3-4 cloves of garlic, minced

- 1 tablespoon Schezwan sauce (adjust to taste)

- 1 tablespoon soy sauce

- 1 teaspoon vinegar (white or rice vinegar)

- 1/2 teaspoon red chili sauce (optional, adjust to taste)

- 1/2 teaspoon black pepper powder

- Salt, to taste

- 2-3 tablespoons cooking oil

- Fresh spring onions, chopped (for garnish)


Step 1: Prepare the Ingredients

1. If using leftover rice, ensure it's cold and not too sticky. Cold rice works best for fried rice as it won't become mushy during cooking.

2. Finely chop the mixed vegetables and onion. Mince the garlic.


Step 2: Heat the Wok or Pan

1. Heat a wok or a large pan over high heat.

2. Add cooking oil and swirl it to coat the surface of the pan evenly.


Step 3: Sauté the Aromatics

1. Add minced garlic and sauté for a few seconds until it becomes fragrant.

2. Add the finely chopped onion and stir-fry for a couple of minutes until it turns translucent.


Step 4: Add Vegetables

1. Add the finely chopped mixed vegetables and stir-fry for a few minutes until they are slightly cooked but still retain their crunch.


Step 5: Add Sauces and Seasonings

1. Push the vegetables to the side of the pan and add Schezwan sauce to the cleared space. Sauté the sauce for a minute until it becomes aromatic.

2. Mix the Schezwan sauce with the vegetables.

3. Add soy sauce, vinegar, red chili sauce (if using), black pepper powder, and salt. Mix well.


Step 6: Add Rice

1. Add the cooked rice to the wok or pan.

2. Use a spatula or wooden spoon to gently break up any clumps of rice and combine them with the vegetables and sauces.


Step 7: Stir-Fry

1. Stir-fry the rice and vegetables together for a few minutes, ensuring even distribution of the sauces and seasonings.

2. Make sure the rice is well heated and coated with the sauces.


Step 8: Garnish and Serve

1. Garnish the Schezwan fried rice with chopped spring onions.

2. Remove from heat and transfer the fried rice to serving plates.
