Corn Soup



A step-by-step recipe for making delicious and creamy corn soup:



Ingredients:


- 2 cups of corn kernels (fresh, frozen, or canned)

- 1 medium-sized onion, finely chopped

- 2 cloves of garlic, minced

- 1 small carrot, finely chopped

- 1 celery stalk, finely chopped (optional)

- 2 tablespoons butter or oil

- 4 cups vegetable or chicken broth

- 1/2 cup heavy cream or milk (adjust to taste)

- Salt and pepper to taste

- Fresh parsley or chives for garnish (optional)


Instructions:


1. Prepare the Vegetables:


1.1. If using fresh corn on the cob, remove the kernels using a knife. If using canned or frozen corn, drain and set aside.


1.2. Finely chop the onion, garlic, carrot, and celery.


2. Sauté the Vegetables:


2.1. In a large pot, heat the butter or oil over medium heat.


2.2. Add the chopped onion, garlic, carrot, and celery (if using). Sauté for about 5 minutes or until the vegetables become soft and the onion turns translucent.


3. Add the Corn:


3.1. Add the corn kernels to the pot and continue to sauté for another 2-3 minutes.


4. Simmer with Broth:


4.1. Pour in the vegetable or chicken broth, stirring well.


4.2. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes. This will allow the flavors to meld together.


5. Blend the Soup:


5.1. Using an immersion blender, carefully blend the soup directly in the pot until it reaches your desired level of creaminess. If you don't have an immersion blender, you can use a regular blender. However, let the soup cool slightly before blending, and blend in batches if necessary.


6. Return to the Heat:


6.1. Place the blended soup back on the stove over low heat.


7. Add Cream:


7.1. Stir in the heavy cream or milk and continue to cook for an additional 5-10 minutes, allowing the soup to heat through. Adjust the consistency with more cream or milk if needed.


8. Season and Serve:


8.1. Season the soup with salt and pepper to taste. Be sure to taste and adjust the seasoning as needed.


9. Garnish and Enjoy:


9.1. Ladle the creamy corn soup into bowls.


9.2. Garnish with fresh parsley or chives if desired.


9.3. Serve the corn soup hot and enjoy!
