Hasselback Potatoes

A step-by-step recipe for making Hasselback Potatoes, a delicious and visually appealing side dish:

Ingredients:

- 4 large russet or Yukon Gold potatoes

- 2-3 tablespoons melted butter or olive oil

- Salt and freshly ground black pepper, to taste

- 2-3 cloves garlic, minced (optional)

- 2-3 sprigs fresh rosemary or thyme (optional)

- Grated Parmesan cheese (optional, for topping)

Instructions:

1. Prep the Potatoes:

1.1. Preheat your oven to 425°F (220°C).

1.2. Scrub the potatoes clean, leaving the skin on.

2. Make Hasselback Cuts:

2.1. Place one potato on a cutting board. To help steady the potato while you cut, you can place two chopsticks or wooden spoons on each side of the potato. This will prevent your knife from cutting all the way through.

2.2. Starting from one end, make thin, evenly spaced slices across the potato, about 1/8 inch apart, without cutting all the way through. The chopsticks or spoons will stop the knife from going too far.

2.3. Repeat this process for all the potatoes.

3. Season the Potatoes:

3.1. Carefully brush the potatoes with melted butter or olive oil, making sure to get some in between the slices.

3.2. Season the potatoes generously with salt and freshly ground black pepper. You can also sprinkle minced garlic and fresh herbs (rosemary or thyme) between the slices for extra flavor.

4. Bake the Potatoes:

4.1. Place the prepared potatoes on a baking sheet lined with parchment paper or in a baking dish.

4.2. Bake in the preheated oven for about 45 minutes to 1 hour, or until the potatoes are tender and the edges are crispy. Cooking time may vary depending on the size of the potatoes, so check for doneness by inserting a fork or knife into the thickest part of the potato.

5. Optional: Add Parmesan Cheese

5.1. If you'd like to add Parmesan cheese, sprinkle it evenly over the potatoes during the last 10-15 minutes of baking. This will allow the cheese to melt and become golden brown.

6. Serve:

6.1. Remove the Hasselback Potatoes from the oven and let them cool slightly before serving.

6.2. You can serve them as a side dish for a variety of main courses, and they pair wonderfully with sour cream or a dipping sauce of your choice.

Enjoy your homemade Hasselback Potatoes with their crispy edges, creamy centers, and wonderful flavor! They make an impressive addition to any meal.
