Mix Vegetable Curry is a versatile and flavorful dish made with a medley of vegetables cooked in a spiced tomato-based gravy. A step-by-step guide on how to make Mix Vegetable Curry:


Ingredients:


For the Curry:


- 2 cups mixed vegetables (e.g., potatoes, carrots, peas, beans, cauliflower, bell peppers, etc.), chopped

- 1 large onion, finely chopped

- 2 tomatoes, finely chopped

- 2 cloves garlic, minced

- 1-inch piece of ginger, minced

- 2 tablespoons vegetable oil

- 1/2 teaspoon cumin seeds

- 1/2 teaspoon turmeric powder

- 1 teaspoon ground coriander

- 1 teaspoon ground cumin

- 1 teaspoon red chili powder (adjust to your spice preference)

- 1/2 teaspoon garam masala

- Salt to taste

- Fresh cilantro leaves for garnish

- Water (as needed)


Instructions:


1. Prepare the Vegetables:


   - Wash, peel (if required), and chop the mixed vegetables into bite-sized pieces. You can use any combination of your favorite vegetables.


2. Sauté Onions:


   - Heat oil in a large pan or skillet over medium heat.

   - Add cumin seeds and let them sizzle for a few seconds.

   - Add the chopped onions and sauté until they turn translucent and start to brown, about 3-4 minutes.


3. Add Ginger and Garlic:


   - Stir in the minced ginger and garlic. Sauté for another 1-2 minutes until the raw smell disappears.


4. Add Tomatoes:


   - Add the chopped tomatoes and cook until they become soft and the oil starts to separate, about 4-5 minutes.


5. Add Spices:


   - Lower the heat and add the turmeric powder, ground coriander, ground cumin, red chili powder, and salt. Stir well and cook for 2-3 minutes.


6. Cook the Vegetables:


   - Add the chopped mixed vegetables to the pan and mix them with the spice-onion-tomato mixture.

   - Cover the pan and cook for 5-7 minutes, stirring occasionally, until the vegetables start to soften.


7. Simmer with Water:


   - Add enough water to cover the vegetables. Bring it to a simmer.

   - Cover the pan and let the vegetables cook over medium-low heat until they are tender but not overcooked. Stir occasionally and add more water if needed.


8. Finish with Garam Masala:


   - Once the vegetables are cooked to your desired tenderness, stir in the garam masala.

   - Cook for an additional 2-3 minutes to let the flavors meld.


9. Garnish and Serve:


   - Garnish your Mix Vegetable Curry with fresh cilantro leaves.

   - Serve it hot with steamed rice, naan, or chapati.
