Ingredients:


- 4-5 ripe tomatoes (roma or plum tomatoes work well)

- 1 small onion (white or red)

- 2 cloves garlic

- 1-2 jalapeño peppers (adjust to your desired level of heat)

- 1/2 cup fresh cilantro leaves (coriander leaves)

- Juice of 1 lime

- Salt and pepper to taste


Optional Additions:


- 1/2 teaspoon cumin

- 1/2 teaspoon sugar (to balance the acidity)

- 1/2 teaspoon paprika

- Corn kernels

- Black beans


Instructions:


1. Prepare the Ingredients:

   - Wash the tomatoes and remove the stems. Cut them in half and remove the seeds and excess liquid. Dice the tomatoes into small pieces.

   - Peel and finely chop the onion.

   - Mince the garlic cloves.

   - Remove the seeds and membranes from the jalapeño peppers (unless you want it very spicy) and finely chop them. Be sure to wash your hands thoroughly after handling jalapeños and avoid touching your eyes.


2. Chop the Cilantro:

  - Rinse the cilantro leaves and chop them finely.


3. Combine Ingredients:

  - In a mixing bowl, combine the diced tomatoes, chopped onion, minced garlic, chopped jalapeños, and cilantro.


4. Add Lime Juice:

  - Squeeze the juice of one lime over the mixture. Lime juice not only adds flavor but also helps preserve the salsa.


5. Season and Spice:


  - Season the salsa with salt and pepper to taste. If you want to add extra flavor, consider adding optional spices like cumin, chili powder, or paprika. A small amount of sugar can also balance the acidity of the tomatoes if needed.


6. Mix Well:

Gently toss all the ingredients together until they are well combined.


7. Refrigerate:

Allow the salsa to sit in the refrigerator for at least 30 minutes to allow the flavors to meld together. This step is essential for a well-developed salsa.


8. Taste and Adjust:

Before serving, taste the salsa and adjust the seasonings to your liking. You can add more salt, lime juice, or spices if needed.
