Balushahi



Balushahi is a classic Indian sweet, known for its flaky, deep-fried texture and sugar syrup coating. A step-by-step guide on how to make Balushahi:


Ingredients:


For the Dough:


- 2 cups of all-purpose flour (maida)

- 1/4 cup of ghee (clarified butter)

- 1/4 cup of yogurt (curd)

- A pinch of baking soda

- A pinch of salt


For the Sugar Syrup:


- 1 1/2 cups of sugar

- 1/2 cup of water

- A few drops of lemon juice (to prevent crystallization)

- A pinch of cardamom powder

- Chopped pistachios or almonds for garnish (optional)


Instructions:


1. Prepare the Dough:


- In a mixing bowl, combine all-purpose flour, ghee, yogurt, baking soda, and a pinch of salt.


2. Knead the Dough:


- Knead the mixture into a smooth, firm dough. If the dough is too dry, you can add a little more yogurt.


3. Rest the Dough:


- Cover the dough with a clean cloth and let it rest for about 15-20 minutes.



6. Fry Balushahi:


- Gently slide the shaped Balushahi into the hot oil. Fry them over low to medium heat until they turn golden brown and are cooked through. This might take about 10-15 minutes.


7. Prepare Sugar Syrup:


- In another pan, combine sugar and water to make the sugar syrup. Add a few drops of lemon juice to prevent crystallization. Heat it over medium heat until the syrup reaches one-string consistency. To test this, take a small amount of syrup between your thumb and forefinger and pull them apart. If it forms a single thread, it's ready. Alternatively, you can use a candy thermometer, and it should read around 110°C (230°F).


8. Dip Balushahi in Syrup:


- Once the Balushahi are fried and golden brown, remove them from the oil and immediately dip them into the hot sugar syrup. Allow them to soak for a few seconds, ensuring they are well-coated.


9. Let Them Cool:


- Place the sugar-soaked Balushahi on a plate and let them cool.


10. Garnish:


- Garnish with chopped pistachios or almonds if desired.


11. Serve:


- Serve your homemade Balushahi once they have cooled and the sugar syrup coating has set.
