Ingredients:


For the Curry:


- 2 tablespoons vegetable oil

- 1 pound (450g) chicken, lamb, or vegetables (cubed)

- 4 small round bread rolls (loaves), such as Portuguese rolls

- A knife for hollowing out the bread


Instructions:


For the Curry:


1. Sauté Aromatics:


- In a large pan, heat 2 tablespoons of vegetable oil over medium heat.


- Add the finely chopped onion and sauté until it becomes translucent, about 3-4 minutes.


- Stir in the minced garlic and ginger and cook for another minute until fragrant.


2. Add Curry Powder:


- Add 1-2 tablespoons of curry powder to the aromatics. You can adjust the amount based on your spice preference. Cook for a minute to toast the spices.


3. Cook Protein or Vegetables:


- Add the cubed chicken, lamb, or vegetables to the pan. Cook until the meat is browned or the vegetables are slightly tender.


4. Add Tomatoes and Tomato Paste:


- Stir in the chopped tomatoes and tomato paste. Cook for a few minutes until the tomatoes break down and release their juices.


5. Add Chickpeas and Broth:


- If you're using chickpeas, add them to the pan. Then, pour in 1 cup of vegetable or chicken broth.
