Carrot Halwa



Gajar Halwa, also known as Carrot Halwa, is a classic Indian dessert made from fresh carrots, milk, sugar, and flavored with cardamom. A step-by-step guide on how to make Gajar Halwa:


Ingredients:


- 500 grams of fresh carrots (about 4-5 medium-sized carrots)

- 500 ml of full-fat milk

- 1/2 cup of sugar (adjust to taste)

- 2 tablespoons of ghee (clarified butter)

- 1/2 teaspoon of cardamom powder

- A handful of chopped nuts (almonds, cashews, or pistachios)

- A pinch of saffron strands (optional)

- A few raisins for garnish (optional)


Instructions:


1. Grate the Carrots:


- Wash, peel, and grate the fresh carrots. You can use a fine grater for a traditional texture or a food processor for a finer texture.


2. Cook the Carrots:


- Heat a large, heavy-bottomed pan or kadai and add 2 tablespoons of ghee.

- Add the grated carrots and sauté them in ghee for 8-10 minutes, stirring occasionally. The carrots will start to change color and become aromatic.


3. Add Milk:


- Pour the full-fat milk into the pan with the sautéed carrots. Bring the mixture to a boil.


4. Simmer and Cook:


- Reduce the heat and simmer the carrot and milk mixture. Stir frequently to prevent it from sticking to the pan.


5. Add Sugar:


- When the milk is reduced to about half and the carrots are tender, add sugar and continue to cook. Stir constantly.


6. Flavor with Cardamom:


- Once the sugar is added, the mixture will become slightly liquidy. Keep stirring and allow the liquid to evaporate. The carrot mixture will start to thicken. Add cardamom powder at this stage.


7. Add Nuts and Saffron:


- Add the chopped nuts and saffron strands (if using). Continue to cook and stir.


8. Cook Until Thickened:


- Keep cooking until the Gajar Halwa thickens to your desired consistency. It should leave the sides of the pan and be soft but not too runny.


9. Garnish:


- Garnish the Gajar Halwa with a few raisins and additional nuts.


10. Serve:


- Serve Gajar Halwa warm. It can be enjoyed on its own or with a scoop of vanilla ice cream.
