Chicken Chettinad



Chicken Chettinad is a delicious and spicy South Indian Curry Known for its bold flavours and aromatic spices. A step by step guide on how to make Chicken Chettinad:



Ingredients:


For Marinating the Chicken:


- 500 grams of chicken, cut into pieces
- 1/2 cup of thick yogurt (curd)
- 1 teaspoon of turmeric powder
- 1 teaspoon of red chili powder
- Salt to taste


For Chettinad Masala:


- 1 tablespoon of oil
- 2-3 dried red chilies
- 2 teaspoons of coriander seeds
- 1 teaspoon of cumin seeds
- 1 teaspoon of fennel seeds
- 1 teaspoon of black peppercorns
- 1/2 teaspoon of fenugreek seeds
- 1/2 teaspoon of poppy seeds
- 1/4 cup of grated coconut
- 2-3 green chilies
- 2-3 cloves of garlic
- 1-inch piece of ginger
- 1 large onion, finely chopped
- 1-2 tomatoes, finely chopped
- 1 sprig of curry leaves
- 2-3 tablespoons of vegetable oil
- Salt to taste


Instructions:


1. Marinate the Chicken:


Marination Step:

- In a bowl, combine the chicken pieces, yogurt, turmeric powder, red chili powder, and salt. Mix well and let it marinate for at least 30 minutes.


2. Prepare the Chettinad Masala:


Masala Preparation Step:

- In a pan, heat 1 tablespoon of oil and add dried red chilies, coriander seeds, cumin seeds, fennel seeds, black peppercorns, fenugreek seeds, and poppy seeds. Roast them on low heat until they become aromatic. Remove them from the heat and let them cool.


Masala Blending Step:


- In a blender, add the roasted spices, grated coconut, green chilies, garlic, and ginger. Blend to form a smooth paste. Add a little water if needed.


3. Cook the Chicken:


Onion and Tomato Sauté Step:


- In a large, heavy-bottomed pan or kadai, heat 2-3 tablespoons of vegetable oil over medium heat. Add the finely chopped onions and sauté until they turn golden brown.


Adding Tomatoes Step:


- Add the chopped tomatoes and cook until they become soft and the oil starts to separate.


Chicken and Masala Addition Step:


- Now, add the marinated chicken to the pan and cook for about 5-7 minutes until it starts to turn white.

- Add the Chettinad masala paste to the pan and mix it well with the chicken.

- Add salt to taste and cook for another 10-15 minutes, stirring occasionally, until the chicken is cooked through and the masala is well incorporated.


Curry Finishing Step:


- Add curry leaves and cook for a few more minutes.


4. Serve:


Final Serving Step:


- Once the chicken is tender and the Chettinad curry is thick and aromatic, remove it from the heat.

- Serve the Chicken Chettinad hot with steamed rice, roti, or naan.
