Gujarati Sev Tameta

Ingredients:


For the Curry:


- 3 large tomatoes, finely chopped

- 2 tablespoons oil

- 1/2 teaspoon mustard seeds

- 1/2 teaspoon cumin seeds

- 1/4 teaspoon asafoetida (hing)

- 1 green chili, finely chopped (adjust to your spice preference)

- 1/2 teaspoon turmeric powder

- 1 teaspoon red chili powder (adjust to your spice preference)

- 1 teaspoon coriander powder

- 1 teaspoon sugar

- Salt to taste

- 1/2 cup water

- Fresh coriander leaves for garnish


For the Sev Topping:


- 1 cup sev (gram flour noodles)

- A pinch of red chili powder (for extra spice, optional)


Instructions:


1. Prepare the Curry:


Tempering Step:


- Heat 2 tablespoons of oil in a pan or kadai over medium heat. Add mustard seeds and cumin seeds. Let them splutter.


Asafoetida and Green Chili Step:


- Add asafoetida (hing) and finely chopped green chili. Sauté for a few seconds until they release their aroma.


Tomatoes and Spices Step:


- Add the finely chopped tomatoes to the pan and stir well. Cook for a few minutes until the tomatoes become soft.


Turmeric, Red Chili Powder, and Coriander Powder Step:


- Add turmeric powder, red chili powder, coriander powder, sugar, and salt. Mix well to coat the tomatoes with the spices.


Water and Simmer Step:


- Pour in 1/2 cup of water and let the curry simmer for about 5-7 minutes until it thickens and the oil starts to separate. Stir occasionally.


2. Prepare the Sev Topping:


- In a separate bowl, toss the sev with a pinch of red chili powder (for extra spice, if desired).


3. Serve:


- To serve, ladle the hot Sev Tameta curry into individual serving bowls.


4. Garnish:


- Top the curry with a generous handful of the spicy sev.


5. Serve:


- Garnish with fresh coriander leaves and serve immediately with steamed rice or roti.
