Kadhi is a popular North Indian dish made from yogurt and besan (gram flour), flavored with spices. It's often served with rice or roti. A step-by-step guide on how to make Kadhi:
Ingredients:
For the Kadhi:
- 1 cup of yogurt (curd)
- 2 tablespoons of besan (gram flour)
- 1/2 teaspoon of turmeric powder
- Salt to taste
- 2-3 cups of water
- A handful of chopped cilantro for garnish
For the Tempering (Tadka):
- 2 tablespoons of cooking oil
- 1/2 teaspoon of mustard seeds
- 1/2 teaspoon of cumin seeds
- 1-2 dried red chilies
- A pinch of asafoetida (hing)
- 8-10 curry leaves
Instructions:
1. Prepare the Kadhi Base:
- In a mixing bowl, combine the yogurt, besan (gram flour), turmeric powder, and salt.
2. Whisk the Mixture:
- Gradually add 2-3 cups of water to the yogurt mixture, whisking continuously. Ensure there are no lumps, and the mixture is smooth.
3. Cook the Kadhi:
- Transfer the yogurt mixture to a deep saucepan and place it over medium heat.
- Stir continuously as it comes to a boil. Kadhi will start to thicken as it cooks. Continue to cook for about 15-20 minutes until the besan is cooked through and the Kadhi has a creamy consistency. Be sure to stir to prevent lumps.
4. Prepare the Tempering (Tadka):
- In a separate small pan, heat 2 tablespoons of cooking oil over medium heat.
- Add mustard seeds and cumin seeds. When they start to crackle, add dried red chilies, asafoetida (hing), and curry leaves.
- Sauté for a minute or so until the spices become aromatic. Be careful not to burn them.
5. Add the Tempering to the Kadhi:
- Pour the prepared tempering (tadka) into the cooked Kadhi. Stir well to incorporate the flavors.
6. Simmer:
- Let the Kadhi simmer for a few more minutes to meld the flavors. If the Kadhi is too thick, you can add a little more water to achieve your desired consistency.
7. Garnish:
- Garnish the Kadhi with chopped cilantro.
8. Serve:
- Serve the Kadhi hot with steamed rice or roti.
