Kanda Poha



Kanda Poha is a popular Maharashtrian breakfast dish made from flattened rice (poha), onions (kanda), and a variety of spices. It's a delicious and quick breakfast option. A step-by-step guide on how to make Kanda Poha:


Ingredients:


- 2 cups of thick poha (flattened rice)

- 1 large onion, finely chopped

- 2-3 green chilies, finely chopped (adjust to your spice preference)

- 10-12 curry leaves

- 1/2 teaspoon mustard seeds

- 1/2 teaspoon cumin seeds

- 1/2 teaspoon turmeric powder

- A pinch of asafoetida (hing)

- Salt to taste

- 2 tablespoons of cooking oil

- 1/4 cup of roasted peanuts (optional)

- Fresh coriander leaves for garnish

- Freshly grated coconut for garnish (optional)

- Lemon wedges for serving


Instructions:


1. Rinse Poha:


- Place the poha in a sieve or colander and rinse it under running water for a few seconds. Be gentle and don't over-rinse, as poha is delicate and can become mushy.


2. Drain Poha:


- Allow the excess water to drain from the poha. It should become soft but still retain its individual grains.


3. Prepare the Tempering:


- Heat oil in a large pan or kadai over medium heat. Add mustard seeds, cumin seeds, and let them splutter.

- Add asafoetida (hing), chopped green chilies, and curry leaves. Sauté for a minute until the curry leaves become crisp.


4. Add Onions:


- Add the finely chopped onions and sauté them until they turn translucent and slightly golden.


5. Add Turmeric:


- Sprinkle turmeric powder over the sautéed onions and mix well.


6. Add Poha:


- Add the rinsed and drained poha to the pan and gently mix it with the onion and spice mixture. Be careful not to break the poha grains.


7. Season with Salt:


- Season the poha with salt and gently mix to ensure even distribution of salt.


8. Cover and Cook:


- Cover the pan with a lid and let the poha cook on low heat for 3-4 minutes. This helps to steam the poha and infuse the flavors.


9. Garnish and Mix:


- Uncover the pan and add roasted peanuts (if using) and mix them into the poha.


10. Serve:


- Remove the Kanda Poha from heat and garnish with freshly chopped coriander leaves and grated coconut (if using). Serve hot with lemon wedges for a tangy twist.
