Malpua



Malpua is a sweet Indian pancake often made during festivals and special occasions. A step-by-step guide on how to make Malpua:


Ingredients:


For the Malpua Batter:


- 1 cup all-purpose flour (maida)

- 2 tablespoons fine semolina (sooji)

- 1/2 cup milk

- 1/4 cup yogurt

- 1/4 teaspoon fennel seeds (saunf)

- A pinch of cardamom powder

- A pinch of baking powder

- Ghee or oil for frying


For the Sugar Syrup:


- 1 cup sugar

- 1/2 cup water

- A few saffron strands (optional)

- A few drops of rose water (optional)


Instructions:


1. Prepare the Sugar Syrup:


- In a saucepan, combine sugar and water.

- Heat it over medium heat, stirring until the sugar dissolves.

- Add saffron strands and rose water if using.

- Simmer for a few minutes until you get a slightly sticky one-thread consistency. Set it aside.


2. Prepare the Malpua Batter:


- In a mixing bowl, combine all-purpose flour, fine semolina, fennel seeds, cardamom powder, and baking powder.


3. Add Milk and Yogurt:


- Gradually add milk and yogurt to the dry ingredients.

- Mix well to form a smooth and thick batter. It should be lump-free.


4. Rest the Batter:


- Cover the bowl and let the batter rest for 2-3 hours. This helps the batter ferment slightly and develop better flavor.


5. Fry the Malpua:


- Heat ghee or oil in a shallow frying pan over medium heat.

- Pour a ladleful of the batter into the hot ghee to form a small pancake. You can make them as big or small as you like.

- Fry the Malpuas until they turn golden brown on both sides. They should be crisp on the edges and soft in the center.


6. Drain Excess Ghee:


- Remove the fried Malpuas and drain any excess ghee by placing them on a paper towel.


7. Soak in Sugar Syrup:


- While the Malpuas are still warm, immerse them in the prepared sugar syrup. Let them soak for a minute or two so that they absorb the sweetness.


8. Garnish and Serve:


- Serve the Malpuas on a plate and garnish with slivered pistachios or almonds.

- Malpua can be enjoyed warm or at room temperature.
