Mango Ice Cream



Homemade mango ice cream is a delightful treat, especially during the hot summer months. A step-by-step guide on how to make mango ice cream:


Ingredients:


- 2 cups ripe mango pulp (from about 2-3 ripe mangoes)

- 1 cup heavy cream

- 1 cup whole milk

- 3/4 cup granulated sugar (adjust to taste)

- 1 teaspoon vanilla extract (optional)

- A pinch of salt

- Mango chunks or pieces (optional, for garnish)


Instructions:


1. Prepare the Mangoes:


   - Peel and dice the ripe mangoes. Remove the flesh from the pits.


2. Make Mango Puree:


   - Place the diced mangoes in a blender or food processor and blend until you have a smooth mango puree. Set this aside.


3. Mix Sugar and Milk:


   - In a mixing bowl, combine the granulated sugar, whole milk, and a pinch of salt. Stir until the sugar is fully dissolved.


4. Add Mango Puree:


   - Pour the mango puree into the milk and sugar mixture. Stir well to combine.


5. Add Cream:


   - Pour in the heavy cream and stir until everything is thoroughly mixed. If you want a lighter version, you can use half-and-half or light cream instead of heavy cream.


6. Add Vanilla Extract (Optional):


   - If desired, add a teaspoon of vanilla extract to enhance the flavor. Mix it in.


7. Taste and Adjust:


   - Taste the mixture and adjust the sweetness by adding more sugar if needed, depending on the sweetness of your mangoes.


8. Chill the Mixture:


   - Cover the mixture and refrigerate it for at least 2-3 hours or until it's well chilled. This step is important to ensure a creamy texture when freezing.


9. Freeze:


   - Pour the chilled mango ice cream mixture into an ice cream maker and churn according to the manufacturer's instructions. It typically takes about 20-25 minutes.


10. Garnish (Optional):


    - If you'd like, you can add small mango chunks or pieces to the ice cream during the last few minutes of churning for added texture and flavor.


11. Transfer and Freeze:


    - Once the ice cream reaches a soft-serve consistency, transfer it to an airtight container. If you're adding mango chunks, layer them in between scoops of ice cream. Cover the container and freeze for at least 4-6 hours or until the ice cream is firm.
