Mutton Sukka



Mutton Sukka is a popular South Indian dry mutton dish that's rich in spices and full of flavor. A step-by-step guide on how to make Mutton Sukka:


Ingredients:


For Marinating the Mutton:


- 500 grams mutton, cut into pieces

- 1/2 cup thick yogurt

- 1 teaspoon ginger-garlic paste

- 1/2 teaspoon turmeric powder

- 1 teaspoon red chili powder (adjust to your spice preference)

- Salt, to taste


For Mutton Sukka:


- 3 tablespoons vegetable oil

- 1 onion, finely chopped

- 2 tomatoes, finely chopped

- 1 sprig curry leaves

- 2-3 green chilies, slit

- 1 teaspoon mustard seeds

- 1 teaspoon cumin seeds

- 1/2 teaspoon fennel seeds

- 1/2 teaspoon black peppercorns

- 1/2 teaspoon fenugreek seeds

- 2-3 cloves garlic, minced

- 1-inch piece of ginger, minced

- 1/2 teaspoon garam masala

- 1/2 teaspoon coriander powder

- 1/2 teaspoon cumin powder

- Salt, to taste

- Fresh coriander leaves, chopped (for garnish)


Instructions:


For Marinating the Mutton:


1. Marinate the Mutton:


- In a large mixing bowl, combine the mutton pieces, thick yogurt, ginger-garlic paste, turmeric powder, red chili powder, and salt.


- Mix well to coat the mutton pieces evenly with the marinade.


- Cover the bowl and let it marinate for at least 2 hours, or refrigerate overnight for best results.


For Mutton Sukka:


2. Heat Oil and Temper:


- Heat 3 tablespoons of vegetable oil in a large, heavy-bottomed pan or skillet over medium heat.


- Add mustard seeds, cumin seeds, fennel seeds, black peppercorns, fenugreek seeds, and curry leaves. Let them splutter and release their aroma.


3. Sauté the Aromatics:


- Add minced garlic and ginger. Sauté for a few minutes until they become fragrant.


4. Add Onions and Green Chilies:


- Add the finely chopped onions and green chilies. Sauté until the onions become translucent and start to brown.


5. Add Tomatoes:


- Add the finely chopped tomatoes. Cook until they soften and the oil starts to separate from the mixture.


6. Cook the Marinated Mutton:


- Add the marinated mutton to the pan. Stir well to combine with the onion-tomato mixture.


- Cover the pan and let the mutton cook on low to medium heat for about 30-40 minutes. Stir occasionally to prevent sticking, and add water as needed to keep it from drying out.


7. Add Spices:


- Once the mutton is tender and cooked through, add garam masala, coriander powder, cumin powder, and salt to taste. Mix well.


8. Roast the Mutton:


- Increase the heat to medium-high and roast the mutton until it turns dry and starts to brown. Stir frequently to avoid burning.


9. Garnish and Serve:


- Once the mutton is nicely roasted and dry, remove it from heat.


- Garnish with freshly chopped coriander leaves.
