Sago Porridge



Sago porridge is a creamy and comforting dessert made from tapioca pearls cooked in sweetened milk with flavors like cardamom and saffron. A step-by-step guide on how to make sago porridge:


Ingredients:


- 1/2 cup sago (tapioca pearls)

- 4 cups milk

- 1/2 cup sugar (adjust to taste)

- 1/2 teaspoon cardamom powder

- A pinch of saffron strands (optional)

- Chopped nuts (almonds, cashews, pistachios) for garnish

- Raisins for garnish (optional)


Instructions:


1. Rinse Sago:


   - Start by rinsing the sago under running water to remove any excess starch. Rinse until the water runs clear.


2. Soak Sago:


   - Place the rinsed sago in a bowl and add enough water to cover them. Let them soak for about 15-20 minutes. They will absorb the water and become plump.


3. Boil Milk:


   - In a heavy-bottomed saucepan, heat the milk over medium heat. Bring it to a gentle boil, then reduce the heat to low.


4. Drain and Add Sago:


   - Drain the soaked sago and add them to the simmering milk. Stir gently to prevent sticking.


5. Cook Sago:


   - Cook the sago in the milk on low heat, stirring frequently. It will take about 20-25 minutes for the sago to become translucent and soft. Be patient, as this step is crucial for the sago to cook properly.


6. Add Sugar:


   - Once the sago is soft and translucent, add the sugar to the porridge. You can adjust the amount of sugar according to your taste.


7. Add Cardamom and Saffron:


   - Stir in the cardamom powder for flavor. If you're using saffron, soak a pinch of saffron strands in a tablespoon of warm milk and then add it to the porridge for a lovely aroma and color.


8. Simmer:


   - Let the sago porridge simmer for another 5-7 minutes, allowing the flavors to meld and the porridge to thicken.


9. Garnish:


   - Remove the sago porridge from the heat. Garnish with chopped nuts and raisins (if desired). You can also add a few saffron strands on top for extra visual appeal.


10. Serve:


    - Serve the sago porridge hot or chilled, according to your preference.
