Sandesh



Sandesh is a popular Bengali sweet made from chhena (fresh cottage cheese), sugar, and flavored with cardamom. It's known for its soft and creamy texture. A step-by-step guide on how to make Sandesh:


Ingredients:


- 2 cups of chhena (fresh cottage cheese)

- 1/2 cup of powdered sugar (adjust to taste)

- A pinch of cardamom powder

- A few saffron strands

- Chopped pistachios or almonds for garnish (optional)


Instructions:


1. Prepare Chhena:


- To make chhena, boil milk and curdle it with lemon juice or vinegar. Strain the whey and collect the chhena in a muslin cloth. Squeeze out excess whey by hanging the chhena for about 30 minutes.


2. Knead Chhena:


- Take the chhena in a wide plate and knead it well until it becomes smooth and free from lumps. This process is crucial to achieve a smooth Sandesh texture.


3. Cook Chhena:


- Heat a non-stick pan or a heavy-bottomed pan over low heat. Add the kneaded chhena and cook it while stirring continuously for 5-7 minutes. The chhena should become thicker and start to leave the sides of the pan.


4. Add Sugar:


- Once the chhena is cooked, add the powdered sugar and continue to stir. The mixture will become more liquidy but will thicken again.


5. Add Cardamom and Saffron:


- Add a pinch of cardamom powder and a few saffron strands (pre-soaked in warm milk). Stir well to combine the flavors.


6. Cook to Desired Consistency:


- Keep cooking and stirring until the mixture thickens and starts to leave the sides of the pan. It should be soft and come together like a dough.


7. Shape Sandesh:


- Remove the mixture from the heat and let it cool for a few minutes until it's warm to the touch. Then, take small portions and shape them into round or square Sandesh. You can use molds for a decorative shape.


8. Garnish:


- Garnish the Sandesh with chopped pistachios or almonds if desired.


9. Serve:


- Let the Sandesh cool and set, and then serve them as a delightful Bengali sweet.
