Tindora Masala



Tindora Masala, also known as Ivy Gourd Masala, is a delicious and spicy Indian stir-fry made with ivy gourd (tindora) and a blend of aromatic spices. A step-by-step guide on how to make Tindora Masala:


Ingredients:


- 250 grams of fresh tindora (ivy gourd), thinly sliced

- 2-3 tablespoons of vegetable oil

- 1/2 teaspoon cumin seeds

- 1/2 teaspoon mustard seeds

- 1/2 teaspoon turmeric powder

- 1 teaspoon red chili powder (adjust to your spice preference)

- 1 teaspoon coriander powder

- 1/2 teaspoon cumin powder

- Salt to taste

- Fresh coriander leaves for garnish


Instructions:


1. Prepare the Tindora:


- Wash the tindora (ivy gourd) well and trim both ends. Slice them into thin rounds. You can also make lengthwise cuts if you prefer.


2. Heat Oil and Add Seeds:


- Heat 2-3 tablespoons of vegetable oil in a pan or skillet over medium heat. Add cumin seeds and mustard seeds and let them splutter.


3. Sauté Tindora:

- Add the sliced tindora to the pan and sauté them on medium-high heat for a few minutes until they start to turn golden and slightly crispy.


4. Add Spices:


- Lower the heat to medium. Add turmeric powder, red chili powder, coriander powder, cumin powder, and salt to the tindora. Mix well to coat the tindora with the spices evenly.


5. Cook and Stir:


- Continue to cook the tindora, stirring occasionally, for about 10-15 minutes or until they are tender and slightly caramelized.


6. Garnish:


- Garnish with freshly chopped coriander leaves.


7. Serve:


- Remove the Tindora Masala from heat and serve it hot as a side dish with roti, naan, or rice.
