Vegetarian Fajitas

Ingredients:


For the Vegetarian Fajitas:


- 2 large bell peppers (various colors), thinly sliced

- 1 large onion, thinly sliced

- 1 zucchini, thinly sliced

- 1 yellow squash, thinly sliced

- 2 cloves garlic, minced

- 2 tablespoons vegetable oil

- 1 teaspoon chili powder

- 1/2 teaspoon ground cumin

- 1/2 teaspoon smoked paprika

- Salt and pepper, to taste

- Juice of 1 lime

- Flour tortillas, for serving

- Salsa

- Lime wedges


Instructions:


1. Prepare the Vegetables:


- Wash and thinly slice the bell peppers, onion, zucchini, and yellow squash. You can use various colors of bell peppers for a vibrant presentation.


2. Sauté the Vegetables:


- Heat 2 tablespoons of vegetable oil in a large skillet over medium-high heat.


- Add the sliced vegetables to the hot skillet. Sauté them for about 5-7 minutes, or until they become tender and slightly charred, stirring occasionally.


3. Season the Vegetables:


- Sprinkle the minced garlic, chili powder, ground cumin, smoked paprika, salt, and pepper over the sautéed vegetables. Stir to coat the vegetables with the spices.


4. Squeeze Lime Juice:


- Squeeze the juice of one lime over the seasoned vegetables and give them a final toss. The lime juice adds a fresh and tangy flavor.


5. Heat the Tortillas:


- In a separate skillet or in the oven, warm the flour tortillas according to the package instructions. This is typically done for a few seconds on each side in a dry skillet or for a short time in the oven.


6. Assemble the Vegetarian Fajitas:


- Place a generous portion of the sautéed vegetable mixture in the center of a warm tortilla.


- Add your favorite fajita toppings, such as salsa, sour cream or Greek yogurt, guacamole or sliced avocado, grated cheese (if desired), and chopped fresh cilantro.


7. Serve:


- Fold the sides of the tortilla over the vegetable mixture and toppings to form a fajita.
