Cabbage Soup



Cabbage Soup Recipe:


Ingredients:


- 1 small cabbage, shredded

- 1 onion, finely chopped

- 2 carrots, peeled and diced

- 2 celery stalks, chopped

- 3 cloves garlic, minced

- 1 can (14 oz) diced tomatoes

- 8 cups vegetable broth

- 1 teaspoon dried oregano

- 1 teaspoon dried thyme

- 1 bay leaf

- Salt and pepper to taste

- 2 tablespoons olive oil

- Fresh parsley for garnish (optional)


Instructions:


1. Prep Vegetables:

   - Shred the cabbage, chop the onion, dice the carrots, and chop the celery.


2. Sauté Aromatics:

   - In a large pot, heat olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent.


3. Add Vegetables:

   - Add the diced carrots, chopped celery, and shredded cabbage to the pot. Cook for about 5-7 minutes until the vegetables begin to soften.


4. Add Tomatoes:

   - Pour in the diced tomatoes with their juice. Stir well to combine.


5. Season:

   - Add dried oregano, dried thyme, bay leaf, salt, and pepper to the pot. Stir to distribute the seasoning.


6. Pour Vegetable Broth:

   - Pour in the vegetable broth. Bring the mixture to a boil.


7. Simmer:

   - Reduce the heat to low, cover the pot, and let the soup simmer for about 20-25 minutes until the vegetables are tender.


8. Check Seasoning:

   - Taste the soup and adjust the seasoning if needed. Add more salt and pepper according to your taste.


9. Remove Bay Leaf:

   - Before serving, remove the bay leaf from the soup.


10. Serve:

    - Ladle the hot cabbage soup into bowls.


11. Garnish (Optional):

    - Garnish with fresh parsley if desired.
