Kokum Soup Recipe:
Ingredients:
- 6-8 dried kokum petals
- 1 cup mixed vegetables (carrots, beans, peas), finely chopped
- 1 small onion, finely chopped
- 2 tomatoes, chopped
- 1/2 cup coconut milk
- 1/2 teaspoon mustard seeds
- 1/2 teaspoon cumin seeds
- 1/4 teaspoon asafoetida (hing)
- 1-2 green chilies, chopped
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1 tablespoon ghee or oil
- Salt to taste
- Fresh coriander leaves for garnish
Instructions:
1. Soak Kokum:
- Soak the dried kokum petals in 1/2 cup warm water for about 15-20 minutes. This will release the flavor and color.
2. Prepare Vegetables:
- Finely chop the mixed vegetables, onion, and tomatoes.
3. Make Kokum Extract:
- After soaking, squeeze the soaked kokum to extract the juice. Discard the petals and keep the kokum extract aside.
4. Sauté Aromatics:
- In a large pot, heat ghee or oil over medium heat. Add mustard seeds, cumin seeds, and asafoetida. Allow them to splutter.
5. Add Vegetables:
- Add chopped onions and green chilies. Sauté until the onions are translucent.
6. Add Tomatoes:
- Add chopped tomatoes to the pot. Cook until the tomatoes are soft and the oil starts to separate.
7. Add Vegetables:
- Add the finely chopped mixed vegetables to the pot. Stir well and cook for a few minutes.
8. Add Spices:
- Add turmeric powder, red chili powder, and salt. Mix the spices with the vegetables.
9. Pour Kokum Extract:
- Pour the kokum extract into the pot. Mix well and let it simmer for 5-7 minutes.
10. Add Coconut Milk:
- Pour in the coconut milk. Stir the soup gently.
11. Simmer:
- Allow the soup to simmer on low heat for another 5-7 minutes, ensuring the flavors blend well.
12. Check Seasoning:
- Taste the soup and adjust the seasoning if needed. Add more salt or chili powder according to your preference.
13. Garnish and Serve:
- Garnish the kokum soup with fresh coriander leaves. Serve it hot.
