Mixed Vegetable Soup


Mixed Vegetable Soup Recipe:


Ingredients:


- 1 cup mixed vegetables (carrots, peas, beans, corn, etc.), finely chopped

- 1 onion, finely chopped

- 1/2 cup cabbage, finely shredded

- 1/4 cup celery, finely chopped (optional)

- 2 tomatoes, chopped

- 2 cloves garlic, minced

- 1-inch ginger, grated

- 1/2 teaspoon black pepper powder

- 1/2 teaspoon cumin powder

- 1/2 teaspoon coriander powder

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon red chili powder (adjust to taste)

- 6 cups vegetable broth or water

- 2 tablespoons olive oil or butter

- Salt to taste

- Fresh coriander leaves for garnish (optional)


Instructions:


1. Prepare Vegetables:

   - Finely chop the mixed vegetables of your choice. You can use carrots, peas, beans, corn, etc. Also, chop onion, cabbage, celery, tomatoes, garlic, and ginger.


2. Sauté Aromatics:

   - In a large pot, heat olive oil or butter over medium heat. Add minced garlic and grated ginger. Sauté for a minute until fragrant.


3. Add Onions:

   - Add finely chopped onions to the pot. Sauté until the onions are soft and translucent.


4. Add Spices:

   - Add black pepper powder, cumin powder, coriander powder, turmeric powder, and red chili powder. Stir well to coat the onions with the spices.


5. Add Vegetables:

   - Add the chopped mixed vegetables, shredded cabbage, chopped celery, and chopped tomatoes to the pot. Mix everything well.


6. Cook Vegetables:

   - Cook the vegetables for about 5-7 minutes, stirring occasionally, until they start to soften.


7. Pour Broth or Water:

   - Pour in the vegetable broth or water into the pot. Bring the mixture to a boil.


8. Simmer:

   - Reduce the heat to low, cover the pot, and let the soup simmer for about 15-20 minutes or until the vegetables are tender.


9. Season:

   - Season the soup with salt according to your taste. Adjust the spices if needed.


10. Finish:

    - If desired, you can use an immersion blender to partially blend the soup for a thicker consistency. Alternatively, leave it as is for a chunkier texture.


11. Serve:

    - Ladle the hot mixed vegetable soup into bowls. Garnish with fresh coriander leaves if desired.



12. Enjoy:
