Patatas Bravas

Certainly!  A step-by-step guide on how to make Patatas Bravas, a classic Spanish tapas dish:

Ingredients:

For Potatoes:

- 4 large potatoes, peeled and cut into bite-sized cubes

- Olive oil for frying

- Salt to taste

For Bravas Sauce:

- 2 tablespoons olive oil

- 2 garlic cloves, minced

- 1 teaspoon smoked paprika

- 1/2 teaspoon hot paprika or cayenne pepper (adjust to taste)

- 1 cup tomato sauce

- 1 teaspoon sugar

- Salt to taste

For Garlic Aioli:

- 1/2 cup mayonnaise

- 1-2 garlic cloves, minced

- 1 tablespoon lemon juice

- Salt to taste

Instructions:

1. Fry Potatoes:

   - Heat olive oil in a deep pan for frying. Fry the potato cubes until they are golden brown and cooked through. Remove from the oil and place them on a paper towel-lined plate to drain excess oil. Sprinkle with salt.

2. Make Bravas Sauce:

   - In a separate saucepan, heat 2 tablespoons of olive oil over medium heat. Add minced garlic and sauté until it's fragrant but not browned.

   - Stir in the smoked paprika and hot paprika or cayenne pepper. Mix well.

   - Add the tomato sauce and sugar. Simmer the sauce for about 10 minutes, allowing it to thicken. Season with salt to taste.

3. Make Garlic Aioli:

   - In a small bowl, mix mayonnaise, minced garlic, lemon juice, and salt. Adjust the seasoning according to your taste.

4. Assemble:

   - Place the fried potatoes on a serving dish.

   - Drizzle the bravas sauce over the potatoes. You can be as generous as you like.

   - Drizzle or serve the garlic aioli on top or on the side.

5. Serve:

   - Serve the Patatas Bravas hot as a tapas dish or a side. Garnish with chopped fresh parsley for added freshness.

Enjoy your Patatas Bravas with the flavorful bravas sauce and creamy garlic aioli! It's a classic Spanish dish perfect for sharing.
