Sabudana Khichdi



Sabudana Khichdi is a popular and flavorful Indian dish, often enjoyed during fasting days. A step-by-step guide on how to make Sabudana Khichdi:


Ingredients:


- 1 cup sabudana (tapioca pearls)

- 1 medium-sized potato, peeled and diced

- 1/2 cup roasted peanuts, coarsely ground

- 1 green chili, finely chopped

- 1 teaspoon cumin seeds

- 1 tablespoon ghee (clarified butter)

- 1 tablespoon oil

- A pinch of asafoetida (hing)

- 1/2 teaspoon sugar (optional)

- Salt to taste

- Fresh coriander leaves, chopped, for garnish

- Freshly grated coconut for garnish (optional)

- Lemon wedges for serving


Instructions:


1. Rinse Sabudana:

   - Wash the sabudana under running water until the water runs clear. Soak the sabudana in water for about 3-4 hours or overnight. The sabudana should be soaked well and become soft.


2. Check Sabudana Texture:

   - After soaking, press a pearl between your fingers; it should mash easily. If it's still hard, let it soak for a little longer.


3. Roast Peanuts:

   - Dry roast the peanuts until they are crunchy. Once cooled, coarsely grind them. Set aside.


4. Prepare Potatoes:

   - Boil or steam the diced potatoes until they are just tender but not mushy.


5. Heat Ghee and Oil:

   - In a pan, heat ghee and oil. Add cumin seeds and let them splutter.


6. Add Asafoetida and Green Chilies:

   - Add a pinch of asafoetida (hing) and chopped green chilies. Sauté for a few seconds.


7. Add Potatoes:

   - Add the boiled and diced potatoes. Cook them until they turn golden brown.


8. Add Soaked Sabudana:

   - Add the soaked and drained sabudana to the pan. Mix well.


9. Cook Sabudana:

   - Cook the sabudana on medium heat, stirring continuously. Be gentle to avoid breaking the sabudana pearls.


10. Add Ground Peanuts:

    - Once the sabudana pearls become translucent, add the coarsely ground peanuts. Mix well.


11. Season with Salt and Sugar:

    - Season with salt and add sugar if desired. The sugar adds a hint of sweetness but is optional.


12. Garnish and Serve:

    - Garnish the Sabudana Khichdi with chopped coriander leaves and freshly grated coconut if you like. Serve hot with lemon wedges on the side.
