Ingredients:


For the Red Rubies:


- 1/2 cup water chestnut cubes (canned or fresh)

- Red food coloring

- 1/4 cup tapioca pearls

- Red food coloring


For the Coconut Syrup:


- 1 cup coconut milk

- 1/2 cup sugar

- In a bowl, add a few drops of red food coloring and enough water to submerge the water chestnut cubes. Add the water chestnuts to the colored water and let them soak for about 30 minutes to absorb the color. The water chestnuts will turn bright red.


- Drain the colored water chestnuts and set them aside.
