Gooseberry (Amla) Chutney Recipe:
Ingredients:
- Fresh gooseberries (Amla), deseeded and chopped
- 1 small onion, finely chopped
- 1-2 green chilies, chopped
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- A pinch of asafoetida (hing)
- Curry leaves
- 1 tablespoon oil
- Salt to taste
- Coriander leaves for garnish (optional)
Instructions:
1. Prepare the Gooseberries:
- Wash and deseed the gooseberries. Chop them into small pieces. If you prefer a smoother chutney, you can also blend them.
2. Sautéing:
- In a pan, heat oil over medium heat.
- Add mustard seeds and let them splutter. Add cumin seeds, asafoetida, and curry leaves.
3. Add Onions and Chilies:
- Add finely chopped onions and green chilies. Sauté until the onions become translucent.
4. Add Gooseberries:
- Add the chopped or blended gooseberries to the pan. Mix well with the sautéed onions and chilies.
5. Cook the Mixture:
- Cook the mixture on medium heat until the gooseberries are soft and well-cooked. Stir occasionally.
6. Seasoning:
- Add salt to taste and mix well. Adjust the seasoning according to your preference.
7. Cool and Blend (Optional):
- Allow the mixture to cool. If you prefer a smoother consistency, you can transfer it to a blender and pulse until you achieve the desired texture.
8. Garnish:
- Garnish the chutney with fresh coriander leaves (optional).
9. Serve:
- Transfer the gooseberry chutney to a serving bowl.
10. Enjoy:
- Serve the gooseberry chutney as a side dish with dosa, idli, rice, or any of your favorite meals.
