Makhana Soup



Makhana, also known as fox nuts or lotus seeds, can be used to prepare a delicious and nutritious soup. A simple and tasty Makhana Soup recipe for you:


Makhana Soup Recipe:


Ingredients:


- 1 cup makhana (fox nuts/lotus seeds)

- 1 cup mixed vegetables (carrots, beans, peas), finely chopped

- 1 onion, finely chopped

- 2 tomatoes, chopped

- 1-inch ginger, grated

- 3-4 cloves of garlic, minced

- 1 teaspoon cumin seeds

- 1 teaspoon coriander powder

- 1/2 teaspoon turmeric powder

- 1/2 teaspoon red chili powder (adjust according to taste)

- Salt to taste

- 1 tablespoon ghee (clarified butter) or oil

- 4 cups vegetable broth or water

- Fresh coriander leaves for garnish

- Lemon wedges for serving


Instructions:


1. Roasting Makhana:

   - Dry roast makhana in a pan over medium heat until they become crisp. Keep stirring to ensure even roasting. Set aside.


2. Sautéing Vegetables:

   - In a separate pot, heat ghee or oil. Add cumin seeds and let them splutter.

   - Add chopped onions, grated ginger, and minced garlic. Sauté until the onions become translucent.


3. Adding Spices:

   - Add coriander powder, turmeric powder, and red chili powder. Mix well and sauté for another minute.


4. Adding Vegetables:

   - Add the finely chopped vegetables and cook for a few minutes until they are slightly tender.


5. Adding Tomatoes:

   - Add chopped tomatoes and cook until they are soft and the oil starts to separate.


6. Boiling Soup:

   - Pour vegetable broth or water into the pot. Bring the mixture to a boil and then reduce the heat to simmer. Let it cook for about 10-15 minutes, allowing the flavors to meld.


7. Blending (Optional):

   - For a smoother consistency, you can blend the soup using an immersion blender or transfer it to a regular blender. Be careful when blending hot liquids.


8. Adding Makhana:

   - Crush the roasted makhana slightly and add them to the soup. Simmer for an additional 5 minutes.


9. Seasoning:

   - Season the soup with salt according to your taste.


10. Garnishing:

   - Garnish the soup with fresh coriander leaves.


11. Serving:

   - Serve the Makhana Soup hot, with a wedge of lemon on the side.
