Pyaaz Kachori



Pyaaz Kachori Recipe:


Ingredients:


For the Kachori Dough:

- 2 cups all-purpose flour (maida)

- 1/4 cup semolina (sooji)

- 1/4 cup ghee (clarified butter)

- Water for kneading

- A pinch of salt


For the Filling:

- 1 cup finely chopped onions

- 1/2 cup coarsely crushed boiled potatoes

- 1 teaspoon fennel seeds (saunf)

- 1 teaspoon cumin seeds (jeera)

- 1/2 teaspoon nigella seeds (kalonji)

- 1/2 teaspoon mustard seeds (rai)

- 1 teaspoon ginger-garlic paste

- 1/2 teaspoon turmeric powder

- 1 teaspoon red chili powder

- 1 teaspoon coriander powder

- 1/2 teaspoon garam masala

- 1 tablespoon oil

- Salt to taste

- Chopped coriander leaves for garnish


For Deep Frying:

- Oil


Instructions:


1. Prepare the Kachori Dough:

   - In a mixing bowl, combine all-purpose flour, semolina, ghee, and a pinch of salt.

   - Gradually add water and knead the mixture into a firm and smooth dough. Cover and let it rest for 15-20 minutes.


2. Prepare the Filling:

   - In a pan, heat oil and add fennel seeds, cumin seeds, nigella seeds, and mustard seeds. Let them splutter.

   - Add ginger-garlic paste and sauté until the raw smell disappears.

   - Add chopped onions and cook until they become golden brown.

   - Add crushed boiled potatoes, turmeric powder, red chili powder, coriander powder, garam masala, and salt. Mix well and cook for a few minutes.

   - Garnish with chopped coriander leaves, mix, and let the filling cool.


3. Shape the Kachoris:

   - Divide the rested dough into small equal-sized balls. Roll each ball into a small disk.

   - Place a spoonful of the prepared filling in the center of each disk.

   - Carefully gather the edges and seal the kachori, ensuring the filling is completely enclosed.


4. Heat Oil for Deep Frying:

   - Heat oil in a deep frying pan over medium heat.


5. Deep Fry the Kachoris:

   - Gently slide the filled kachoris into the hot oil. Fry until they turn golden brown and crispy.

   - Ensure even frying by flipping the kachoris if needed.


6. Drain Excess Oil:

   - Remove the fried kachoris and place them on absorbent paper to drain excess oil.


7. Serve Hot:

   - Serve the pyaaz kachoris hot with mint chutney or tamarind chutney.
