Green Chili Chutney


 
Spicy Green Chili Chutney Recipe:


Ingredients:

- 15-20 green chilies (adjust according to your spice tolerance)

- 1 small onion, roughly chopped

- 4-5 cloves of garlic

- Small piece of ginger

- 1 tablespoon tamarind pulp

- Salt to taste

- 2 tablespoons oil

- 1/2 teaspoon mustard seeds

- A pinch of asafoetida (hing)

- Curry leaves (optional)


Instructions:


1. Prepare the Green Chilies:

   - Wash the green chilies and remove the stems. You can keep the seeds for extra heat or remove them for a milder chutney.


2. Blend the Ingredients:

   - In a blender, add green chilies, chopped onion, garlic, ginger, tamarind pulp, and salt.

   - Blend the ingredients into a coarse paste. Add a little water if needed to facilitate blending.


3. Heat Oil:

   - In a pan, heat oil over medium heat.


4. Temper the Chutney:

   - Add mustard seeds to the hot oil. Allow them to splutter.

   - Add a pinch of asafoetida (hing) and curry leaves (if using). Sauté for a few seconds.


5. Add the Chutney Mixture:

   - Carefully add the blended chutney mixture to the pan. Be cautious as it might splutter.


6. Cook the Chutney:

   - Cook the chutney over medium heat, stirring occasionally. Allow it to simmer for about 5-7 minutes.


7. Adjust Consistency and Seasoning:

   - If the chutney is too thick, you can add a little water to achieve the desired consistency.

   - Taste the chutney and adjust salt if needed.


8. Cool and Serve:

   - Once the chutney is cooked, let it cool to room temperature before serving.


9. Store:

   - You can store the green chili chutney in an airtight container in the refrigerator for a few days.


10. Enjoy:

   - Serve the spicy green chili chutney as a condiment with dosa, idli, rice, or any of your favorite dishes.


Note: Adjust the number of green chilies based on your spice preference. This chutney is fiery and adds a burst of flavor to your meals.
