Jowar Millet Rotis

A step-by-step recipe for making Jowar (Sorghum) Millet Roti:

Ingredients:

- 1 cup jowar (sorghum) millet flour

- Warm water, as needed (approximately 1/2 to 3/4 cup)

- Salt, to taste (optional)

- Ghee or oil for cooking (optional)

Instructions:

1. Prepare the Dough:

   - In a mixing bowl, add the jowar millet flour.

   - Gradually add warm water to the flour while mixing it with your hand or a spoon. Continue adding water until the dough comes together and is soft but not sticky.

   - If desired, add a pinch of salt to the dough and knead it well.

2. Knead the Dough:

   - Once the dough is formed, transfer it to a clean, flat surface.

   - Knead the dough for about 5-7 minutes until it becomes smooth and pliable. This helps in making soft rotis.

3. Divide the Dough:

   - Divide the dough into small lemon-sized balls.

4. Roll out the Rotis:

   - Take one dough ball and flatten it slightly with your palm.

   - Dust the dough ball with some jowar millet flour to prevent sticking.

   - Using a rolling pin, roll out the dough ball into a circular roti of about 6-7 inches in diameter. Rotate and flip the roti frequently while rolling to ensure even thickness.

5. Cook the Roti:

   - Heat a tawa (griddle) or a flat skillet over medium-high heat.

   - Once the tawa is hot, carefully transfer the rolled-out roti onto it.

   - Cook the roti for about 1-2 minutes on one side until small bubbles start to form.

   - Flip the roti and cook the other side for another 1-2 minutes until both sides have light golden-brown spots.

   - If desired, you can apply a little ghee or oil on both sides of the roti while cooking to make it more flavorful and soft.

   - Press lightly with a spatula while cooking to ensure even cooking.

6. Repeat the Process:

   - Remove the cooked roti from the tawa and place it in a clean cloth or a roti basket to keep it warm.

   - Repeat the rolling and cooking process with the remaining dough balls until all the rotis are cooked.

7. Serve:

   - Serve the hot Jowar Millet Rotis with your favorite curry, dal, or vegetable dish.
