Methi Khakhra:
Ingredients:
- 1 cup whole wheat flour (atta)
- 1/4 cup fresh fenugreek leaves (methi leaves), washed and finely chopped
- 1/2 teaspoon turmeric powder
- 1/2 teaspoon red chili powder (adjust to taste)
- 1/2 teaspoon cumin seeds
- Salt to taste
- Water, as needed
- Oil or ghee, for cooking
Instructions:
1. Prepare the Dough:
- In a mixing bowl, combine the whole wheat flour, chopped fenugreek leaves, turmeric powder, red chili powder, cumin seeds, and salt.
- Gradually add water and knead the mixture into a smooth, firm dough. The dough should not be too soft or too stiff.
2. Divide the Dough:
- Divide the dough into small lemon-sized balls.
3. Roll out the Khakhras:
- Take one dough ball and flatten it slightly with your palm.
- Dust the dough ball with some dry wheat flour to prevent sticking.
- Place the dough ball on a rolling board and gently roll it out into a thin, round disc using a rolling pin. The thickness should be uniform.
4. Cook the Khakhras:
- Heat a tawa (griddle) or a flat skillet over medium heat.
- Once the tawa is hot, carefully transfer the rolled-out khakhra onto it.
- Cook the khakhra for about 1-2 minutes on one side until small bubbles start to form.
- Flip the khakhra and cook the other side for another 1-2 minutes until both sides have light golden-brown spots.
- Apply a little oil or ghee on both sides while cooking to make the khakhra crispier and more flavorful.
- Press lightly with a spatula while cooking to ensure even cooking.
5. Repeat the Process:
- Remove the cooked khakhra from the tawa and place it in a clean cloth or a khakhra press to keep it warm and crisp.
- Repeat the rolling and cooking process with the remaining dough balls until all the khakhras are cooked.
6. Cool and Store:
- Allow the khakhras to cool completely before storing them in an airtight container.
- Khakhras can be stored for several days and enjoyed as a crispy snack.
7. Serve:
- Serve the Methi Khakhras with tea, chutney, or pickle as a delicious and healthy snack option.
