Qubani Ka Meetha



Qubani Ka Meetha is a popular Hyderabadi dessert made from dried apricots. A step-by-step guide to making it:


 Ingredients:


- Dried apricots (qubani): 250 grams

- Sugar: 1 cup (adjust to taste)

- Water: 2 cups

- Cardamom pods: 3-4

- Saffron strands: a pinch (optional)

- Slivered almonds and pistachios: for garnish

- Fresh cream or ice cream (optional): for serving


 Instructions:


1. Soak the Apricots:

   - Rinse the dried apricots thoroughly under cold water to remove any dust or impurities.

   - Place the apricots in a bowl and cover them with enough water. Let them soak overnight or for at least 6-8 hours until they become soft and plump.


2. Cook the Apricots:

   - In a deep saucepan or pressure cooker, transfer the soaked apricots along with the water used for soaking.

   - Add sugar, whole cardamom pods, and a pinch of saffron strands to the pan.

   - Bring the mixture to a gentle boil over medium heat, then reduce the heat to low and let it simmer for about 20-25 minutes, stirring occasionally, until the apricots are completely softened and the mixture thickens slightly.


3. Mash and Cook Further (Optional):

   - If the apricots are still intact after simmering, you can gently mash them with the back of a spoon or a potato masher to break them down into a smoother consistency.

   - Continue to cook the mixture for an additional 5-10 minutes until it reaches your desired thickness and the flavors meld together. Adjust the sugar if needed according to your taste preference.


4. Cool and Garnish:

   - Once the qubani mixture reaches the desired consistency, remove it from the heat and let it cool to room temperature.

   - Transfer the qubani ka meetha to a serving dish or individual bowls. Garnish with slivered almonds and pistachios for added flavor and texture.


5. Serve:

   - Qubani Ka Meetha can be served warm, at room temperature, or chilled, according to your preference.

   - It can be enjoyed on its own as a dessert or paired with a dollop of fresh cream or a scoop of vanilla ice cream for an extra indulgent treat.
