Ginger Barfi
Ingredients:
- 2 cups grated khoya (mawa)
- 1 cup sugar
- 1/4 cup water
- 2 tablespoons ghee (clarified butter)
- 2 tablespoons finely grated ginger
- 1/4 teaspoon cardamom powder
- Chopped pistachios or almonds for garnish (optional)
Instructions:
Step 1: Prepare Ingredients
- Grate the khoya (mawa) using a grater and set it aside.
- Finely grate fresh ginger and measure out 2 tablespoons.
Step 2: Cook Sugar Syrup
- In a heavy-bottomed pan or kadhai, add sugar and water.
- Heat the pan over medium heat, stirring until the sugar dissolves completely.
- Continue to cook the sugar syrup until it reaches a one-string consistency. To check for one-string consistency, take a small amount of syrup between your thumb and forefinger. When you separate your fingers, a single string of syrup should form.
Step 3: Add Grated Ginger
- Once the sugar syrup reaches one-string consistency, add the finely grated ginger to the syrup.
- Stir well to combine and let the ginger infuse its flavor into the syrup.
Step 4: Add Khoya
- Next, add the grated khoya (mawa) to the sugar syrup.
- Mix well to combine all the ingredients.
Step 5: Cook the Mixture
- Cook the mixture over medium heat, stirring continuously to prevent sticking and burning.
- Cook until the mixture thickens and starts leaving the sides of the pan. This should take about 10-15 minutes.
Step 6: Add Ghee and Cardamom Powder
- Once the mixture reaches the desired consistency and starts leaving the sides of the pan, add ghee (clarified butter) and cardamom powder.
- Stir well to incorporate the ghee and cardamom powder into the mixture.
Step 7: Transfer to a Tray
- Grease a square or rectangular tray with a little ghee.
- Transfer the cooked mixture to the greased tray and spread it evenly using a spatula.
Step 8: Garnish (Optional)
- Optionally, sprinkle chopped pistachios or almonds on top of the mixture for garnish.
- Gently press the nuts into the mixture using the back of a spoon or spatula.
Step 9: Let it Cool and Set
- Allow the Ginger Barfi mixture to cool down at room temperature for a few hours until it sets completely.
Step 10: Cut into Pieces
- Once the Ginger Barfi has set, use a sharp knife to cut it into square or diamond-shaped pieces.
Step 11: Serve and Enjoy
