Millet Upma:
Ingredients:
- 1 cup millet (any variety such as foxtail millet, pearl millet, or finger millet)
- 2 cups water
- 1 tablespoon oil or ghee
- 1 teaspoon mustard seeds
- 1 teaspoon cumin seeds
- 1/2 cup finely chopped onion
- 1/2 cup chopped mixed vegetables (carrots, peas, bell peppers, beans, etc.)
- 2-3 green chilies, chopped (adjust to taste)
- 1-inch piece of ginger, grated
- 1/4 cup roasted peanuts (optional)
- 8-10 curry leaves
- A pinch of asafoetida (hing)
- Salt to taste
- Freshly chopped coriander leaves for garnish
- Lemon wedges for serving (optional)
Instructions:
Step 1: Rinse and Prepare Millet
1. Rinse the millet under cold water until the water runs clear.
2. Drain the millet and set it aside.
Step 2: Cook Millet
1. In a large pan or skillet, heat oil or ghee over medium heat.
2. Add mustard seeds and cumin seeds. Let them splutter.
3. Add chopped onions and sauté until they turn translucent.
4. Add chopped mixed vegetables, green chilies, grated ginger, roasted peanuts (if using), curry leaves, and a pinch of asafoetida. Stir well and cook for a few minutes until the vegetables are slightly tender.
Step 3: Add Millet
1. Add the rinsed and drained millet to the pan. Stir well to combine with the vegetables.
2. Pour in 2 cups of water and season with salt to taste.
3. Bring the mixture to a boil, then reduce the heat to low.
4. Cover the pan with a lid and let the millet simmer for about 15-20 minutes, or until all the water is absorbed and the millet is cooked through. Stir occasionally to prevent sticking.
Step 4: Garnish and Serve
1. Once the millet is cooked and all the water is absorbed, remove the pan from the heat.
2. Garnish with freshly chopped coriander leaves.
3. Serve hot Millet Upma with a side of lemon wedges for extra flavor (optional).
