Potato Halwa
Ingredients:
- 4 medium-sized potatoes
- 1 cup sugar
- 1/2 cup ghee (clarified butter)
- 1/2 cup milk
- 1/2 teaspoon cardamom powder
- Chopped nuts (cashews, almonds, pistachios) for garnish (optional)
- Saffron strands for garnish (optional)
Instructions:
Step 1: Prepare Potatoes
- Wash the potatoes thoroughly under running water to remove any dirt or impurities.
- Peel the potatoes and grate them using a grater. Alternatively, you can boil the potatoes until they are soft and mash them using a potato masher.
Step 2: Cook Grated Potatoes
- Heat a heavy-bottomed pan or kadhai over medium heat.
- Add ghee (clarified butter) to the pan and let it melt.
- Once the ghee is hot, add the grated potatoes to the pan.
- Stir and cook the potatoes in ghee for about 8-10 minutes until they turn golden brown and release a nice aroma. Keep stirring occasionally to prevent sticking.
Step 3: Add Sugar
- Once the potatoes are cooked and have turned golden brown, add sugar to the pan.
- Mix well to combine the sugar with the potatoes.
- Cook for another 5-7 minutes until the sugar melts and caramelizes, giving the mixture a rich golden color.
Step 4: Add Milk
- Next, add milk to the pan.
- Stir well to combine the milk with the potato-sugar mixture.
- Cook for another 5-7 minutes until the mixture thickens and starts to leave the sides of the pan.
Step 5: Add Cardamom Powder
- Once the mixture thickens, add cardamom powder to the pan.
- Mix well to incorporate the cardamom powder into the mixture. This will add a delightful aroma and flavor to the halwa.
Step 6: Garnish
- Optionally, garnish the Potato Halwa with chopped nuts such as cashews, almonds, or pistachios. You can also add a few strands of saffron for added flavor and color.
- Gently mix the garnishes into the halwa.
Step 7: Serve
- Your delicious Potato Halwa is now ready to be served.
- Serve it hot as a dessert or sweet treat during festivals, celebrations, or special occasions.
Step 8: Storage
- Leftover Potato Halwa can be stored in an airtight container in the refrigerator for up to 2-3 days. Reheat before serving.
