Instructions:
1. In a mixing bowl, combine the mashed potatoes, finely chopped onion, green chilies, ginger paste, coriander leaves, chaat masala, red chili powder, cumin powder, and salt. Mix well until all the ingredients are evenly incorporated.
2. Divide the mixture into equal portions and shape them into round patties or tikkis.
3. If you prefer a crispy coating, you can roll the patties in bread crumbs at this stage.
4. Heat oil in a frying pan or skillet over medium heat.
5. Once the oil is hot, carefully place the potato patties into the oil. Fry them in batches, making sure not to overcrowd the pan.
6. Fry the patties until they turn golden brown and crispy on both sides, flipping them occasionally for even cooking. This will take about 4-5 minutes per side.
7. Once done, remove the potato patties from the oil and place them on a plate lined with paper towels to drain excess oil.
8. Serve hot with mint chutney, tamarind chutney, or tomato ketchup.
