Roasted Sweet Potato and Black Bean Tacos:


Ingredients:


For Roasted Sweet Potatoes:

- 2 medium sweet potatoes, peeled and diced

- 2 tablespoons olive oil

- 1 teaspoon ground cumin

- 1 teaspoon chili powder

- 1/2 teaspoon paprika

- Salt and pepper to taste


For Black Beans:

- 1 (15 oz) can black beans, drained and rinsed

- 1/2 teaspoon ground cumin

- 1/2 teaspoon chili powder

- Salt to taste


For Tacos:

- Corn or flour tortillas

- Toppings such as shredded lettuce, diced tomatoes, sliced avocado, chopped cilantro, salsa, lime wedges, etc.


Instructions:


Step 1: Roast Sweet Potatoes

1. Preheat your oven to 425°F (220°C).

2. In a large bowl, toss the diced sweet potatoes with olive oil, ground cumin, chili powder, paprika, salt, and pepper until evenly coated.

3. Spread the seasoned sweet potatoes in a single layer on a baking sheet lined with parchment paper.

4. Roast in the preheated oven for 20-25 minutes, or until the sweet potatoes are tender and caramelized, stirring halfway through cooking.


Step 2: Prepare Black Beans

1. While the sweet potatoes are roasting, prepare the black beans. In a small saucepan, combine the drained and rinsed black beans with ground cumin, chili powder, and salt.

2. Cook the black beans over medium heat for 5-7 minutes, stirring occasionally, until heated through and well combined with the spices. Keep warm.


Step 3: Assemble Tacos

1. Warm the tortillas in a skillet or microwave until soft and pliable.

2. Spoon a portion of the roasted sweet potatoes and black beans onto each tortilla.

3. Add your desired toppings such as shredded lettuce, diced tomatoes, sliced avocado, chopped cilantro, salsa, or any other toppings of your choice.

4. Squeeze a fresh lime wedge over the tacos for a burst of citrus flavor, if desired.
