Sweet Potato Pancakes


Ingredients:


- 1 cup mashed sweet potatoes (cooked and cooled)

- 1 cup all-purpose flour

- 1 tablespoon brown sugar

- 1 teaspoon baking powder

- 1/2 teaspoon baking soda

- 1/2 teaspoon ground cinnamon

- 1/4 teaspoon ground nutmeg

- 1/4 teaspoon salt

- 1 cup milk (or any milk alternative)

- 1 large egg

- 2 tablespoons melted butter or oil

- 1 teaspoon vanilla extract (optional)

- Butter or oil for cooking

- Maple syrup, honey, or yogurt for serving (optional)


Instructions:


Step 1: Prepare the Sweet Potatoes

- Cook the sweet potatoes until they are soft. You can bake, boil, or microwave them. Once cooked, let them cool slightly, then peel and mash them until smooth. Measure out 1 cup of mashed sweet potatoes for the recipe.


Step 2: Mix Dry Ingredients

- In a large mixing bowl, combine the all-purpose flour, brown sugar, baking powder, baking soda, cinnamon, nutmeg, and salt. Stir well to combine.


Step 3: Mix Wet Ingredients

- In a separate bowl, whisk together the milk, egg, melted butter or oil, and vanilla extract (if using) until well combined.


Step 4: Combine Wet and Dry Ingredients

- Pour the wet ingredients into the bowl of dry ingredients. Mix gently until just combined. Be careful not to overmix; a few lumps are okay. The batter should be thick but pourable. If it's too thick, you can add a little more milk to thin it out.


Step 5: Cook the Pancakes

- Heat a non-stick skillet or griddle over medium heat. Add a small amount of butter or oil to coat the surface.

- Once the skillet is hot, pour about 1/4 cup of batter onto the skillet for each pancake. Use the back of a spoon or ladle to spread the batter into a round shape if necessary.

- Cook the pancakes for 2-3 minutes, or until bubbles form on the surface and the edges look set.

- Flip the pancakes using a spatula and cook for an additional 1-2 minutes on the other side, until golden brown and cooked through.

- Repeat the process with the remaining batter, adding more butter or oil to the skillet as needed.


Step 6: Serve

- Serve the sweet potato pancakes warm, topped with maple syrup, honey, yogurt, or any other toppings of your choice.
