Mango Barfi



Mango Barfi is a delicious Indian sweet made with ripe mangoes, condensed milk, and sugar. A simple recipe for making Mango Barfi at home:


Ingredients:


- 2 cups ripe mango pulp (from about 2-3 large mangoes)

- 1 cup full-fat milk powder

- 1/2 cup condensed milk

- 1/4 cup sugar (adjust according to the sweetness of mangoes)

- 2 tablespoons ghee (clarified butter)

- 1/4 teaspoon cardamom powder

- Chopped nuts for garnish (optional)


Instructions:


1. Prepare the Mango Puree: 

Peel and chop the ripe mangoes. Blend the mango pieces in a blender or food processor until smooth to make mango pulp. Measure out 2 cups of mango pulp and set aside.


2. Cook the Mango Puree: 

Heat a non-stick pan or heavy-bottomed saucepan over medium heat. Add the mango pulp, condensed milk, and sugar to the pan. Stir well to combine.


3. Add Milk Powder:

 Gradually add the milk powder to the mango mixture, stirring continuously to prevent lumps from forming. Cook the mixture over medium-low heat, stirring frequently, until it starts to thicken and comes together into a smooth, thick mass. This will take about 10-15 minutes.


4. Add Ghee and Cardamom: 

Once the mixture thickens, add the ghee and cardamom powder to enhance the flavor. Stir well to incorporate.


5. Cook Until Thickened:

 Continue cooking the mixture, stirring constantly, until it thickens further and starts to leave the sides of the pan. This will take about 5-7 minutes.


6. Set in a Tray: 

Grease a shallow tray or plate with ghee. Transfer the thickened mango mixture to the greased tray and spread it out evenly using a spatula.


7. Garnish (Optional): 

Sprinkle chopped nuts like almonds, pistachios, or cashews over the top of the mango mixture for garnish, if desired.


8. Cool and Slice:

 Allow the Mango Barfi to cool completely at room temperature for a few hours, or refrigerate it for faster cooling. Once cooled and set, slice the Mango Barfi into desired shapes using a sharp knife.


9. Serve: 

Serve the Mango Barfi slices on a plate or store them in an airtight container in the refrigerator for up to a week. Enjoy this delicious sweet treat with family and friends!
